Marinara
Simple pizza with tomato sauce, garlic, oregano and olive oil
About This Pizza
The purest expression of Neapolitan pizza-making, the Marinara strips away all distractions to showcase the fundamental elements that make great pizza. Without cheese to mask any imperfections, every component must be perfect: the tomatoes must be sweet and vibrant, the garlic must be fragrant but not overpowering, the oregano must be aromatic, and the olive oil must be exceptional. This pizza is a testament to the Italian philosophy that the best dishes often have the fewest ingredients.
The Story Behind
The Marinara is the oldest known pizza, predating even the Margherita by several decades. Created in the 18th century by Neapolitan fishermen (marinari), it was designed as a simple, affordable meal that could be eaten quickly before heading out to sea in the early morning hours. The absence of cheese wasn't due to preference but practicality - cheese was expensive and spoiled quickly in the Mediterranean heat. This humble beginning gave birth to what many consider the most challenging pizza to perfect.
